It's a mystical section of the country, that's for sure! I didn't mention the gaita, Galicia's official instrument. The gaita is a bagpipe and it's wild to hear; VERY Celtic sounding. I'm now wishing I added a playlist to my post...

Really must make a point to get up there, only been to Bilbao on the north coast (which we loved) but dying to check out points west... :)

I agree with you about the cows. I remember flicking through local TV channels in a hotel room and being captivated by a competition between Galicia's provinces to find the most beautiful cow. It's a magical part of the world.
